Arugula, Bacon And Apple Salad

Toss arugula, apple and cheese and bacon together.
When ready to serve whisk together dressing ingredients and pour
over salad, tossing to coat evenly but gently

1 lb baby arugula, torn
1 granny smith apple, thinly sliced
5 slices bacon, cooked and crumbled
1/4 cup chopped walnuts
1-2 oz aged white chedded, shredded
Dressing:
juice of 1 lemon
2 Tbs cider vinegar
2 tsp dijon mustard
1 shallot, finely chopped
1 tsp sugar (optional)
1/2 tsp salt
1 Tbs bacon fat
1 Tbs olive oil
freshly ground black pepper to taste
