Veggie Pizza Cupcakes

Instructions

1. Preheat oven to 375 degrees.
2. Unroll biscuits and press each into a 3-inch round.
3. Evenly press each round into the bottom and up the sides in 10 cups of a 12-cup muffin pan.
4. Chill until ready to fill.
5. In a large skillet, heat olive oil over medium heat and cook vegetables, stirring occasionally, until tender.
6. Reduce heat to low and simmer 2 minutes or until slightly reduced. Add Pasta Sauce.
7. Evenly spoon vegetable mixture into prepared muffin cups. Bake 15 minutes. Evenly sprinkle tops with cheese and bake an additional 5 minutes or until cheese is melted and biscuits are golden.
8. Let stand 5 minutes before serving. Gently remove pizza cups form muffin pan. Cool completely.
