Vegan Tacos And Taquitos

Fill a pot half way up with cold water. Bring the water to a boil on the stove.

Once the water is boiling place the chicken breast in the pot. Place the lid on the pot and let the chicken breast cook for about 20 minutes on high or until well cooked.

While the chicken is cooking peal the garlic and the onion. Once peeled chop the onion and the garlic into very small pieces and set them aside.

Clean the lettuce and if you did not buy pre-shredded lettuce than shred it now. Set the shredded lettuce to the side

Wash the tomatoes. Chop them into medium size pieces and set the pieces to the side.

Remove the chicken from the water and let the breasts cool. Then shred the chicken. You can do this by hand. Then mix the onion and garlic with the chicken shredding.

Place a small portion of the shredded chicken mix on top of one of the tortillas. Roll up the tortilla and stick a tooth pick in it to keep the taco from coming unrolled. Fill and roll as many tacos as you can. I usually get about 9-10 from this recipe.

The two methods for cooking the tacos are the following:
*Frying Method
*Fill a frying pan 1/4 full of cooking oil. Add a pinch of salt. Heat the oil medium high on the stove until it just simmers.
*Place at least 4 tacos in the pan. Let them fry until the bottoms of the taco are a light brown color. Then flip them over and brown the other side.
*Fry up all the tacos you rolled.

*Oven Method
*Heat the oven up to 400F.
*Place all of the tacos on a cookie sheet. Take a pinch of salt and sprinkle it over the tacos.
*Bake for about 5 min. KEEP AN EYE ON THE TACOS so they don't burn.

When the tacos are light brown remove them from the heat source. If you used the Oven Method they are ready to serve. If you used the Frying Method allow the grease to drip off and then pat them dry with paper towels before serving.

To serve the tacos place the tacos on a plate. Spread a small amount of sour cream on each taco. Then sprinkle the cheese on top of the tacos. Spread the lettuce over the cheese. (Feel free to use as much lettuce as you want). Place the tomato chunks on top of the lettuce. Then its time to eat.
