Spiced Toasted Pumpkin Seeds
Instructions
1. Preheat oven to 250 degrees.  Spread pumpkin seeds in a single layer on a baking sheet. 
2. Toast for 45 minutes, stirring occasionally, until seeds appear dry and toasted.  
3. If you have large seeds, the cooking time may be longer.  
4. In a large bowl, stir together 2 tablespoons of sugar,  teaspoon salt, and  teaspoon pumpkin pie spice.  Set aside.
5. Melt butter in large skillet over medium-high heat.  
6. Add the hot, toasted pumpkin seeds and sprinkle the remaining 4 tablespoons sugar over the seeds. 
7. Cook over medium heat, stirring continually, until the sugar melts.  
8. This should take only a minute or so.  
9. Pour caramelized seeds into the bowl with the spiced sugar mixture.  Stir until all seeds are coated. 
9. Cool before serving.  Store in an airtight container.
