Scallops With Curry Butter Sauce

Instructions

1. Melt the butter in the pan. Add the fennel. Stir it and wait for few seconds.
2. Add a cup of chicken broth, lemon juice, and sugar. Wait for few minutes. Then put it in a bowl.
3. On a pot, heat the clam juice and chicken broth. Add 6 tbsp of vermouth. Add a tsp of curry powder. Add the sliced mushrooms and shallots.
4. Wait until the sauce is cooked down. Sift it and use only the sauce. Add some cream. Wait until brown.
5. Add the butter. Stir in. Cover it and set aside.
6. In another pan, heat up some oil. Fry the scallops.
7. Put some veggies on the center of the plate. Put the scallops. Now put the sauce on top of it. Serve.
