Sauted Sweet Peppers

Instructions

Prepare the ingredients you'll need to make the peperonata (1); peel the onions and cut them into quarters starting at one end, then cut the sections again along their length into strips about 1/5-inch (1/2 cm) wide (2).
Put the oil in a large saucepan and when it's hot add the whole garlic and the onions (3).
Let them get soft on a low flame for at least 15 minutes, stirring occasionally (4).
In the meanwhile wash and stem the peppers, cut them open and remove the seeds and strings inside; cut the peppers into strips less than -inch (1 cm) wide (5) and, when the onions have softened, add them into the saucepan, stir them together (6)
cover with a lid (7), and let everything simmer on a low flame without adding liquids for at least 30 minutes.
After half of the cooking time, add the tomatoes (canned or puree) (8) add salt to taste and finish simmering (9).
