1/2 large white onion, peeled and minced
1/4 - 1/2 tsp minced fresh garlic (or more to taste)
1 jalapeno or habanero pepper (depends on the heat you want) stemmed, seeded, and minced.
1/4 cup chopped cilantro leaves
1 Tbsp fresh lime juice
salt and fresh ground pepper to taste
