Royal Rice
Instructions
Sautee nuts first. 1/2 of the ghee into the pot with the cashews and almonds until light golden brown. Remove with a slotted spoon. 
*Pop in the raisins, sautee for about 20 seconds, this puffs them and gives a nice flavor. Take out. 
*Add rice to the ghee. Add a dash more of ghee. Sautee for 1-2 minutes. 
*Add three ingredients to the boiling water: the milk with saffron, the salt and the nutmeg. 
Bring back to a boil and add the rice. Stir a little, taking the rice grains off the side of the pot, bring to a boil, cover and simmer 15 minutes. 
*In a wok ( I just used my rounder bottomed fry pan. I think it is a khadai in India...I don't have one yet.) sautee the fennel seeds, cinnimon stick, cumin seeds, cardomom seeds, and cloves. Wait a few seconds until they darken. 
*add and stir quickly so they don't burn: black pepper, cayenne, asfoetida 
*add peas 
*add sugar 
*add fried paneer 
*Sautee it up, coating w/the flavored ghee. 
*add nuts, raisins, and coconuts. 
*put in rice and sautee all together.
