Pot O' Gold
Instructions
Dissolve 1 cup sugar with 1/4 cup sugar. Don't stir but you can swirl the pan.
When the sugar comes to a boil, add 1 1/2 tsp lemon juice.
When the syrup turns brown, turn off the heat.
Very carefully add 2 tbsp heavy cream and whisk. Also add a pat of cold unsalted butter. Continue whisking.
