Massaman Curry With Jumbo Scallops

Instructions

1. Bring 1/4 inch of water to a boil in a steaming pot.
2. In a small sauce pan, heat Massaman curry sauce at medium heat.
3. Add the Lobster tail when the water comes to a boil (Steam 3-5 minutes).
4. Place the Jumbo Sea Scallops in the Massaman Curry sauce. (Cook in sauce 3 minutes).
5. Add diced onions and orange pepper in sauce after the Scallops have been cooking for 1 minute.
6. Slice Avocado and place on serving plate.
7. Break the top of the Lobster tail and place on serving plate.
8. Pour the ingredients in the pan (scallops, pepper, onions) over Lobster tail.
9. *Optional - Serve with Thai Jasmine or Brown rice.
