Marinated Bison Steaks

Instructions

Use a meat mallet to tenderize each of the bison steaks to increase their tenderness and prepare them to absorb the marinade. Pound both sides of the steaks for maximum effect.

Combine the red wine, olive oil and rosemary in a casserole dish. Place a bison steak in the casserole dish and allow it to soak up the marinade for about three minutes, then flip the steak and allow it to marinate for another three minutes.

Continue until you've soaked all of the bison steaks in the marinade. Place each of the steaks into separate Ziploc bags and then divide any leftover marinade evenly between them.

Place each of the Ziploc bags into the refrigerator and allow them to sit for about two hours. Flip them over after the first hour to encourage the marinade to penetrate the steaks evenly.

Remove the Ziploc bags from the refrigerator and allow the bison steaks to warm to room temperature, which takes about one hour. Remove the steaks from their bags and cook immediately.
