Mix together the dry ingredients for a rub and set aside. Coat the turkey with the olive oil and begin adding the dry rub to the outside and underneath the skin of the turkey breast. Once the turkey is coated with the rub, inject the marinade into the turkey. Two syringes full should be fine.

After the turkey is prepared, place it on the grill on indirect heat and put a small piece of aluminum foil loosely on top of the turkey to help keep the skin from burning.

Continuously throughout the first two hours, take a few chunks of hickory wood that have been soaking in water and add them to the top of the coals.

After the first two hours, wrap the turkey breast in aluminum foil and place back on the grill for another two hours, adding more coals as needed to hold a good temperature.

Once the turkey is done let it rest for a few minutes, cut and serve.
