Instructions

1. Remove the top, bottom and skin from pineapple. Slice the pineapple -inch thick top to bottom. Place each pineapple slice onto a hot grill or cast iron skillet and char on both sides. Place the charred pieces on a baking sheet with a rack and cool in the fridge.
2. Meanwhile, mince the cilantro, the habanero, and finely dice the onion. Disclaimer: Habaneros hurt. Avoid touching your skin after mincing the habanero and wash your hands thoroughly.
3. When the pineapple is cold, finely dice it to the same size as the onion.
Combine all the ingredients in a stainless steel bowl. Stir and season. It makes one big bowl.
