Put the softened butter in a bowl, then add the sugar and the vanilla... and keep beating until you have a smooth, even and foamy mixture.
When the mixture is foamy, add the grated lemon zest and the salt; now add the eggs at room temperature, one at a time, and keep beating until creamy.
Now add the sifted flour and baking powder, mix well with a wooden spoon and the cupcake batter is ready.
Place 12 paper baking cups in a cupcake pan, and divide the batter. Now, bake in a static oven at 350F (180C) for about 20 minutes.

Once the cupcakes are cooked, take them out of the oven and let them cool completely. Then, they're ready to be decorated with buttercream, cheese or with a plain frosting. Moreover, you can add chocolate sprinkles or sugar decorations.
