Cauliflower Soup
Instructions
Roughly chop leeks,cauliflower and thinly slice potato; place in a heavy stockpot with chicken stock.
Bring to a simmer and cook until vegetables are tender.
Carefully puree ingredients either with stick blender, food processor, or blender.
Place back into pot, add cream, and bring back to a simmer. Cook just until warm, salt & pepper to taste.
