Banana Cake
Instructions
1) Cream 2/3 cup butter. Add 1 2/3 cup sugar. Slowly add 3 eggs.
2) Add in 1 1/4 cup banana.
3) Sift 2 1/2 cups cake flour, then add 1 1/4 tsp baking powder and 1 1/4 tsp baking soda. Slowly add into the wet ingredients. Alternate with the 2/3 cup buttermilk.
4) Pour batter into baking pan. Bake at 350 deg F for 45 minutes.
Frosting:
1) Whip 1/3 cup butter, then slowly add 3 cups icing sugar, 3 tbsp milk or light cream, then add 1 1/2 tsp vanilla. Beat until smooth and spreadable.
Frost the banana cake with the frosting.
