Autumn Pumpkin Molasses Muffins
Instructions
1. In a large bowl, cream cup butter or margarine with cup brown sugar, and then beat with an electric mixer until smooth.
2. Add 1 cup canned pumpkin, cup molasses, and 1 egg. Beat well.
3. Combine 1 cups self-rising flour and teaspoon baking soda.
4. Add to butter mixture, and stir until dry ingredients are moistened.
5. Stir in cup pecans. Spoon batter into muffin pans that have been sprayed with cooking oil spray, filling two-thirds full.
6. Bake at 375 degrees for 20 minutes. Let cool slightly in pan, and then remove to a nice serving plate.
